Soft Taco's
Ingredients:
Cooked Ground beef
Salsa
shredded lettuce
chopped tomatoes
shredded cheddar cheese
sour cream
pita pockets cut in half
Add salsa to the cooked ground beef and stir thoroughly,
open up your pita pocket and put in about a couple of tablespoons of the ground
beef mixture, top with your choice of lettuce, tomatoes, cheddar, and sour cream.
These taco's can even be enjoyed by toddlers.
Letter Soup
Ingredients:
chicken carcass
chopped vegetables (celery, carrots, broccoli),
peas
corn
2 packages Lipton's chicken noodle soup mix
2 cans whole plum tomatoes chopped
alphabet letters, pasta shells
rice
pepper to taste
Put carcass in a large pot and cover with water, put on stove and bring to
a boil. Remove bones from water. When cool, take off meat from carcass
and add to soup. Add rest of ingredients to the boiling water (be creative, using different
vegetables as they come in season) and simmer for about
an hour. Children enjoy picking out the letters and identifying them or,
the older ones, spelling words.
A delicious and fun way for children to get their daily intake of vegetables!
Best Ever Baked Potatoes
Ingredients:
potatoes
cherry tomatoes
mushrooms
onions (optional)
baby carrots
butter
Wash and peel (wash only if new) potatoes. Slice in 1" thick slices and put
on large piece of tin foil. Top with rest of ingredients ending with a dab of
butter on the top. Seal tin foil completely and place in 350 degree oven for
1 hour or on the BBQ for 45 minutes.
Homemade Bread
Ingredients:
1 package active dry yeast
1/4 cup very warm water (110 - 115 degrees)
2 cups milk
2 tablespoons sugar
2 tablespoons shortening
2 teaspoons salt
6 cups flour
Soften yeast in water. Heat milk, sugar, shortening, and salt until sugar
dissolves. Cool to lukewarm. Stir in 2 cups of flour. Add the softened yeast and stir until smooth.
Stir in the rest of the flour. Turn out onto a floured surface and knead
until smooth (about 10 minutes). Shape into a ball and place in a greased bowl.
Turn once to grease surface. Cover and let rise in a warm place until
double in size (about 1 hour). Punch down.
If making bread, divide into 2 balls and let sit for 15 minutes covered in
bowl. Place in 2 loaf pans shaping dough into a loaf. Let rise. Bake in 375 degree
oven about 45 minutes or until golden brown. Remove from pans and cool
on wire rack.
Panzerotti
Ingredients:
homemade bread dough (recipe above)
pizza sauce
pepperoni
mozzarella
cheese
green pepper
olives
bacon, etc (pizza toppings of your choice)
Let dough rise in bowl. Divide into small balls. Let rise for 15 more minutes. Roll out the ball on a floured
surface. Put sauce in the center being careful not to get it on the edges.
Top with your favourite pizza toppings and then fold in half - pinch to seal.
Bake at 375 degree oven for approximately 20 minutes. Pierce with a fork to allow
steam to escape. We have renamed this recipe Panza"Ruth"ie's because
it has become such a favourite!
Tuna Casserole
Ingredients:
macaroni (or shell) pasta
1 can flaked tuna
1 can Campbell's Cream of Mushroom Soup (undiluted)
Chopped celery (optional)
Chopped Carrots (optional)
Can of Mushrooms (optional)
Cook pasta,rinse and drain, then set aside. Place tuna, can of mushroom soup, vegetables (if using) into a casserole
dish or large bowl. Mix together. Pour in pasta and stir. Serve immediately. If not using vegetables in the dish, serve as a
side dish - my group likes peas or broccoli with this meal the best.
Crockpot Beef with Noodles
Ingredients:
round roast or steak
1 can Campbell's Cream of Mushroom Soup (undiluted)
Egg Noodles
Cut roast into chunks and brown in frying pan. Place in crockpot with mushroom soup. Cook on LOW for 6 hours. Serve on cooked egg noodles with vegetables and a salad.
Crockpot Chili
Ingredients:
cooked ground beef
1 can diced plum tomatoes
1 can Spaghetti Sauce (your favourite brand)
1 can kidney beans
1/2 cup salsa sauce (your favourite brand)
1 can sliced mushrooms (optional)
Italian Seasoning (to taste)
Pepper (to taste)
Take 1/2 of the kidney beans out of the can and puree (my guys are not fussy on the beans and often pick them out... this way, they are getting the nutrition of the
beans right in the chili)... this step is optional - you can add the beans whole if you wish! Add the remainder of the beans to the crockpot along with the other ingredients. Cook on
HIGH until bubbly and then on LOW. Total cooking time is 2 hours.
